Avocado and Hummus Quesadillas

Who doesn’t love Mexican food!  This easy recipe offers you a fun way to introduce some new flavours to your children and because it is so easy you can get them involved in the cooking too!

Time: 10 minutes
Makes: 1 quesadilla
Ingredients:
1 large wholemeal tortilla/wrap (or 2 mini ones)
2 tbs hummus
1/2 an avocado, sliced
Optional: A dozen or so thin slices of red onion

Method:
Heat a non-stick pan (or regular pan if you haven’t got one) over medium heat.
Spread the hummus on the tortilla, and add the avocado slices on top (plus the onion slices, if using).
Fold the tortilla in half.
Add to the pan (if you’re not using non-stick, add a bit of spray oil first) and cook on both sides until golden brown.

It’s as easy as that!  The sky is the limit for flavour combinations so have some fun and enjoy!
