Mediterranean Pinwheels

For those of you who have children who are tired of the good old sandwich or just aren’t interested in them, then Deeni suggests an option that might take their fancy.  The Pinwheel is easy to make and can be filled with any flavours you like or have at hand but remember not to overload with the filling as it will make it difficult to roll and maintain its shape.  The recipe below has a mediterranean flavour but you could use anything that your child/children love.  Whatever you put on them we are sure your kiddos (young and old) are bound to gobble them up!

Makes: 12 pieces
Ingredients:
2 large wholemeal tortillas/wraps
2 tbs tahini, mixed with 1 tbs water + 1 tsp lemon juice (use a fork to combine)
1/4 cup olives, pitted and sliced
1/4 cup cherry tomatoes, halved (can be replaced with sundried tomatoes)
1 cup baby spinach leaves
Handful fresh basil leaves, chopped
1 tsp dried oregano
1 tbs balsamic vinegar

Method:
Divide the tahini mixture into two and spread evenly on each tortilla.
Sprinkle the olives, cherry tomatoes, spinach, basil and oregano evenly over each tortilla.
Drizzle 1/2 a tbs (2 tsp) of balsamic vinegar over the top.
Roll the tortillas up and slice into 6 or so pieces.
