Tropical Muffins

Summer is such a wonderful time for fruit!  So why not take advantage of the delicious mangoes in season right now!  These muffins are packed with vitamins and minerals and are perfect for a mid-morning snack at school or at work.  The chia/flax seeds provide omega-3 fats which have anti-inflammatory properties and can protect against cancer and depression.  And they are super easy to make!


Makes 12 muffins

Ingredients:
3 very ripe bananas, mashed
2 mangoes, mashed (if soft enough) or finely diced
1/3 cup maple syrup (or 1/4 cup honey)
1/3 cup apple puree
2 tbs lime juice
3 tbs chia or flax seeds
1/4 cup desiccated coconut + extra for topping
1/2 cup rolled oats
1 1/2 cups self-raising flour (try wholemeal or wholegrain varieties)

Method:
1.   Pre-heat oven to 180C.  Combine wet ingredients and seeds in a large mixing bowl.
2.   Combine dry ingredients in a smaller mixing bowl and add to the wet ingredients, stirring everything together until combined.
3.   Spoon batter into a greased muffin tin or patty pans.  Sprinkle with desiccated coconut. Bake for 15-20 mins or until cooked.
